I LOVE desserts. I do. I’m diabetic so dessert isn’t EXACTLY my friend. I’m overweight so, there again, NOT MY FRIEND. What’s a girl to do?
Today I made one of my favorite diet friendly desserts. It’s simple and yummy and did I mention SIMPLE? Now, by no MEANS is this my favorite cobbler EVAR! My grandma’s peach cobbler cannot be beaten. Unfortunately, its chock FULL of fat, sugar, fat and sugar. Sigh. ANYWAY, here’s the recipe!

Strawberry-Lemon Cobbler
2 lbs. Frozen Sliced Strawberries (NO SUGAR ADDED)
1 box Lemon Cake Mix
1 can Diet Citrus Soda
Preheat oven to 350 degrees. In the bottom of a 9 X 13 pan put frozen sliced strawberries. Spread them out as evenly as possible. Sprinkle dry cake mix over strawberries. Smooth out so coverage is consistent. Pour can of diet soda gently over cake mix. Cover with foil and cook for 30 min. At 30 minute mark, bump oven temp. up to 400. Remove foil from pan and bake an additional 30 minutes. Serve alone or topped with a dollop of Cool Whip Free.
Now, this recipe is VERY versatile. I’ve made it with all sorts of cake and fruit flavor combinations. Some of my favorites are:
French Vanilla with Strawberries
Coconut with Pineapple
Chocolate Fudge with Cherries*

*If you use a chocolate cake mix use a diet cola. For THIS particular combination I use Diet Cherry Dr. Pepper.

Hmm? Anyway to make this an apple version? Ben’s allergic to strawberries!

Actually you can easily change it up for apples. Use a spice cake mix or a butter pecan and use an apple pie filling (Canned or home made). You might want to watch the cooking time on it and do it without the foil from the start thought. (The foil helps cook the frozen fruit faster)
