I LOVE desserts. I do. I’m diabetic so dessert isn’t EXACTLY my friend. I’m overweight so, there again, NOT MY FRIEND. What’s a girl to do?

Today I made one of my favorite diet friendly desserts. It’s simple and yummy and did I mention SIMPLE? Now, by no MEANS is this my favorite cobbler EVAR! My grandma’s peach cobbler cannot be beaten. Unfortunately, its chock FULL of fat, sugar, fat and sugar. Sigh. ANYWAY, here’s the recipe!

    strawberry-lemon-cobbler

    Strawberry-Lemon Cobbler

2 lbs. Frozen Sliced Strawberries (NO SUGAR ADDED)
    1 box Lemon Cake Mix
    1 can Diet Citrus Soda

Preheat oven to 350 degrees. In the bottom of a 9 X 13 pan put frozen sliced strawberries. Spread them out as evenly as possible. Sprinkle dry cake mix over strawberries. Smooth out so coverage is consistent. Pour can of diet soda gently over cake mix. Cover with foil and cook for 30 min. At 30 minute mark, bump oven temp. up to 400. Remove foil from pan and bake an additional 30 minutes. Serve alone or topped with a dollop of Cool Whip Free.

Now, this recipe is VERY versatile. I’ve made it with all sorts of cake and fruit flavor combinations. Some of my favorites are:

    French Vanilla with Strawberries
    Coconut with Pineapple
    Chocolate Fudge with Cherries*

I hope you give this a try and let me know if you enjoyed it or not!!!

*If you use a chocolate cake mix use a diet cola. For THIS particular combination I use Diet Cherry Dr. Pepper. :)

    Today, I am sad.

I found out, just a few moments ago, that the author David Eddings passed away today. He was 77 years old.

My first thought was, “77???? WTF? How is it even POSSIBLE that he’s that old.” And then… I thought…

I first read the works of David Eddings when I was in college. One of my best friends introduced me to his writings. The fantasy genre was not ever something I had been curious about, but I respected my friend Gary so I gave the books a shot.

    I LOVED THEM!

I began to search out things he had written before and followed the things he published after. His books taught me an appreciation of a genre I NEVER thought I would enjoy much less dive into and devour. Gary taught me to give things a chance even when I don’t feel drawn to whatever it may be.

Thank you both for making my world broader and more enjoyable.
